If you are a vegan/vegetarian this can be substituted with tomato and mozzarella, roasted peppers with olive oil and fungi ripieni - roasted mushrooms stuffed with sourdough and parmesan crumb infused with garlic and rosemary.

Puttanesca - A true Neapolitan dish where the defining component is the marinade which is reduced to a thickness that makes it stick kicking and screaming to the pasta, this can be served with chicken or vegetables.
